Chocolate-Dipped Peanut Butter Stuffed Medjool Dates

Summer Holidays have begun and after a hectic Christmas/New Year my kids and I are enjoying a bit of quiet time. They have been sloth-ing about the place today so I decided to make these healthy-ish treats for them with some medjool dates I picked up cheap. They are really easy and fun to make and the kids all enjoyed their special treats! Here's my version inspired by the recipe here... 

Chocolate-Dipped Peanut Butter Stuffed Medjool Dates 

Ingredients 

8 Medjool dates, pitted

1/2 cup dark choc melts

1 tsp coconut oil

1/2 nut butter, I used unsalted peanuts in the thermomix speed 9 and keep scraping down until it makes butter

sea salt

chia seeds

Fill dates with nut butter, press closed with fingers. Place in freezer to chill for 5-10 mins. Melt the chocolate and coconut oil in the microwave. Dip stuffed dates in melted chocolate. Coat well. Lift date out with a fork and place on baking paper. Top with sea salt and chia seeds. Repeat until dates are coated. Freeze until firm enough to handle. Store in fridge.
