Five Seed Bread

Enjoying the cooler weather we decided to do some baking, today was Five Seed Bread. We made ours in the Thermomix. Scoffed it warm with dobs of butter and some raspberry jam. Nanna came over with her itty bitty dog Sasha. Nanna and Sienna played "Tri-ominos" while Sasha proceeded to pull out all the surprises hidden under my couch. Thanks Sasha! Cameron rated the bread 10/10, Sienna rated it 8/10.

500g water

2 tsp dried instant yeast or 20g fresh yeast

500g bakers flour

1 tsp sea salt

50 g rolled oats 

30 g sesame seeds, plus extra to sprinkle

30 g sunflower seeds, plus extra to sprinkle

30 g pumpkin seeds, plus extra to sprinkle

30 g poppy seeds, plus extra to sprinkle

30 g honey

30 g extra virgin olive oil


Grease a deep-sided loaf tin and set aside.

Place water and yeast into mixing bowl and heat 2 1/2 min/37C/speed 2.

Add all remaining ingredients and knead 2 1/2 min/Dough mode. Dough will have a wet and sticky consistency.

Preheat oven to 200C. Transfer loaf into prepared loaf tin and sprinkle with additional seeds, to taste. Leave to prove in a warm place until doubled in size (approx 1 hour).

Bake 40-45 minutes. Once baked bread should sound hollow when tapped on the underside of the loaf. Allow to cool in tin for 5 minutes before transferring to a wire rack.

Serve bread warm or allow to cool completely before placing into an airtight container until ready to serve.
